Grasparossa refers to both the appellation (in the hills of Modena) and to the clone of Lambrusco. Emilia-Romagna is in north-central Italy, about an hour from Florence. The region is also known for its traditional balsamic vinegar production.


Lambrusco is a family of very old grape varieties native to Italy. There are about 10 different varieties.


The residence of Villa di Corlo dates back from the end of the 17th century. It is situated on the same estate, of approximately 100 hectares, a quarter of which are vineyards. The estate has belonged to the same family for almost a century. 


The beautiful thing about this style of wine is it's meant to be enjoyed before, during or after a meal. Use champagne flutes if you’d like, but I would be using white wine glasses. You could also just use the classic table red wine glasses!

Serve chilled, just as you would any other sparkling wine 10-12 degrees.

The Nose

Luscious black fruit, black cherry, currant, dates moving to a beautiful floral violet and dried rose petals.

Tasting Notes

Intense ruby-red in colour, with a distinctly fragrant bouquet. Wild blackberries, blueberry pie and pomegranate juice. Dry and slightly tannic, it has a beautiful structure and wild earthiness that makes this perfect for roast game, meats or cheeses.

Food Pairings

Restaurant: Pan Fried Veal Sweetbreads.

Home: Salami, Prosciutto and Charcuterie.
