Best known as the birthplace of Amarone, but Valpolicella is home to four styles of wine and millennia of viticulturally history

By law Valpolicella DOC wines must be made using 45-95% Corvina. Corvinone can also substitute up to 50% of the quote for Corvina, which brings round, cherry flavours. Rondinella must comprise from 5% up to 30% of the blend, offering lush floral notes. Molinara is used sparingly these days, and provides lean acidity. The resulting Valpolicella wines are bright, lively, and balanced with savoury sour cherry flavours.


Corvina is most commonly cited characteristic is its sour cherry flavor, as well as its light color and soft tannins. Corvina wines tend to be bright red and lighter in structure.

Rondinella always appears in these wines blended with Corvina (which DNA evidence has shown to be a parent variety), as a secondary constituent along with Corvinone and Molinara.  

Molinara adds acidity to the wines of the Valpolicella and is occasionally blended with Merlot to produce soft elegant Roses.

The goal is to best promote the natural balance of the agro-ecosystem, implementing practices that bring together knowledge of ecology, plant physiology, biochemistry and insect etiology.


Serve slightly chilled at 16 degrees C. Red wine glass to allow for the fresh fruitiness to coat the palate and entrench the senses!

The Nose

Sour cherry blasters and hints of violets! Sun dried tomato, leafy vegetables and savory Italian herbs.

Tasting Notes

Medium bodied with bright acidity, tart red fruit and a soft balance and freshness. Rainier cherry, caperberry and castelvetrano olive! Ocean water, oregano, parsley

Food Pairings

Restaurant: Beetroot carpaccio.  

Home: Red meats, Italian savory herbs.

Amarone was one of the first wines we ever fell in love with! It’s the birth place of my forefathers and the home of many many cultures. My great uncle still lives in this region to this day.
